Summer of Lake Life Meals: Snackleboxes

Summer is finally here in Michigan, and I am kicking it off with a new weekly feature of lake life meals! Whether it's on the boat, in the lawn, on the beach, or back to the kitchen late with little time to cook, I am excited to share my favorite meals and snacks that work for us when we are busy enjoying lake life!



I'm kicking off these weekly recipes with a go-to solution: the Snacklebox! It is a BPA-free tackle box with snacks instead of tackles and lures! The only fish-related item you might see in my snacklebox is goldfish! Haha...




Firstly, you absolutely want a BPA-free box. We don't want to eat any coatings on the plastic that could be harmful to ingest.


The first step is to plan your box. Do your guests have allergies? Do you want a large variety or would you prefer to focus on meats and cheeses? Head to your favorite store and pick up a nice selection - I like to raid Aldi!


When assembling the box, I generally start with any dip cups I'm planning to place. Ranch, hummus, queso, guac... The possibilities are endless! Then I work around the cup.


In the tackle boxes I use, each row is completely separated from each other but the sections in between are placed by the user. So, that means I try to put only "wet" foods by each other, (i.e. fruits, veggies, cheeses, meats) and only "dry" foods by each other (crackers, pretzels, cookies, nuts). Make sense?


Place your dividers wherever it makes sense. For example I might only want one small square for my nuts but two squares for cheese cubes, three or four squares for watermelon. You get the idea.


Once your box is full, close it up tight and keep it upright in the fridge until you're ready to use it. If it's going to be more than 2 days before you use it, I recommend keeping the dry snacks in tupperware until then. When you're finished make sure to take a pic and tag me @katebaumerofficial.
